super easy tater-tot breakfast bake


Sometimes you just wake up and want tater-tots; you know how it is. This is a simple but yummy way for tater-tots to feel like more of a full meal. In the summertime, we actually made this ahead of time to bring with us as a camping breakfast, and simply heated it back up over the fire. This can be made ahead of time and stored in the fridge, or made right away.


WHAT YOU'LL NEED


1 bag of tater tots

1 package (or about 1 cup/340g) of meat of choice (I used Lightlife plant-based ground)

1.5 cups mushrooms, finely sliced

1 onion, finely chopped

3-4 TBSP canned green chillies (optional/other kinds of hot pepper would work)

2 cloves of garlic, minced

8-10 eggs, depending on size, room temp

1/2 cup milk of choice (I used Oat)

1.5 cups shredded cheese of choice (1 cup for top, 1/2 cup for in egg mixture)


Preheat oven to 350F.


Line a pan with a single layer of tater tots. I use a 9 x 11 pan and use about 3/4 of a bag of tater tots.


In a bowl, add eggs, milk, 1/2 cup of cheese, and seasonings. I used salt, pepper, chives, garlic powder, onion powder. Whisk until very well mixed, and slightly foamy. Set aside.


Add some olive oil to a pan and bring to med-high heat. Add the onion and sauté until translucent and fragrant. During the last few moments of cooking, add in the minced garlic. Note: garlic cooks/burns fast, so it won't need to be in the pan for long; maybe a minute. Remove onions and garlic and place in a bowl.


To the same pan, on med-high heat, adding no extra oil and using only whatever is left in the pan, add in your mushrooms. Cooking mushrooms in a dry pan is awesome - just give it time! Once they are medium-browned, add a bit more olive oil and add in your "meat of choice". I used Lightlife plant-based ground, and I really love it's flavour and mouth-feel. Add seasonings of choice - I used salt, pepper, Old Bay, cumin seed, and a bit of balsamic vinegar. Cook until browned, and mix it into the same bowl as the onions and garlic. Also add in the green chillies, if you're using them. Mix well.


Dump out contents of bowl, and spread out evenly on top of the tater tots. Pour the egg mixture over top, ensuring all areas have a bit of egg. Top with remaining cheese.


Place in oven, and bake for 45mins or so, until egg is cooked and cheese is bubbly. Serve with cold sour cream and salsa.
